The Art of Tea is catching on... What a joy! Drinking a cup of Japanese Sencha green tea reminds me of Popeye and his world of spinach. Green teas are as unique as the premature tea buds found in white teas. They have their own personalities and contribute to the body in their own unique ways. Studies have shown the value of tea's natural amino acid called theanine. Tea enhances one's sense of calm and elevates a person's mood. Tea also has been proven to help with weight loss and stress disorders. There are a number of positive aspects to drinking tea, least of which is making your day right again. Upon presenting a tea tasting, I begin by instructing on how to brew that perfect cup. Tea is quiet and requires a few steps to brew. I always enjoy this simple method of teaching water temperature. Of course, we can use a temperature gauge but this is more fun. Simply half fill a saucepan with water. Place it upon your stove burner and watch the "fish eyes" begin to form at the bottom of the pan. This is approximately 155 to 175 degrees Fahrenheit; next a "string of pearls" begins to form around the side of the pan. This is the perfect temperature for green and white teas, 185 degrees F.
